Dr. Lyman is currently Professor Emeritus of Nutrition in the Department of Food Science and Human Nutrition at the University of Illinois at Urbana-Champaign. He has more than 90 peer-reviewed publications, and holds a doctorate in human nutrition and biochemistry from the University of Minnesota.
